The preparation:

  1. First, bring the water and the gelling agent agar agar to a simmer. Once it boils, reduce the heat to low.

  2. Now stir in the sugar until smooth and let it simmer on low heat for another 2 minutes.

  3. Once the sugar is completely dissolved, remove the pan from the heat and let the mixture cool for about 2 minutes.

  4. Now comes the real beautifying part: Pour the liquid into a suitable and pretty mold made of silicone, plastic or glass. Then place the peach pieces in the liquid and place the molds in the refrigerator.

  5. The jelly now only needs to cool in the refrigerator for one to two hours. To serve, simply shake the jelly out of the molds onto a plate.

    Kanten is a traditional Japanese dessert made from the gelling agent agar agar, water and sugar. As a special feature, Kanten is additionally decorated and refined with fruits and other ingredients.

    Agar Agar is the Japanese Gelling Agent

    Agar Agar is a plant-based gelling agent that is not widely used in Germany because it is more expensive than the gelatin commonly found in Germany. In Germany, the usual gelling agent, gelatin, is made from pigskin. It is cheap but not vegetarian. 

    The good thing is that I have found a German brand that offers Agar Agar as a cheap product in the supermarket. Dr. Oetker is currently the only known brand that offers it in German supermarkets. You can buy this package on Amazon, but also in normal supermarkets (Edeka, Real, Rewe). This product contains Agar Agar as the main ingredient. Therefore, it is also ideal for this Japanese dessert.

    The Peach Kanten

    Kanten can be prepared with almost any fruit. Another one of my favorites ( Japanese Strawberry Kanten Jelly) is definitely the peach. I often use the sweet pickled peaches, as they give the Kanten an even more special sweet taste. Because of the sweet peaches, I also use less sugar or sweetener, as they refine the Kanten with a delicious sweetness. Fresh peaches are of course also suitable, but these should be very ripe and soft.
