    Nori are edible seaweed sheets made from Porphyra umbilicalis. They are primarily cultivated off the coasts of Japan, Korea and China and are most known for their use in preparing sushi. Japan alone produces around 7 billion sheets per year, as nori is an important food there. ## Production After the Porphyra umbilicalis has been harvested, it is immediately dried, turned and processed into a paste by re-adding water. Following this process, this paste is spread out by a machine, dried again and then roasted at a temperature of over 200 degrees Celsius. Then they are seasoned with sesame seeds and cut to the usual size. ## Uses of Nori Sheets Nori is not only used for the popular maki sushi, but also in salads, mixed drinks, such as smoothies and as a coating for fish dishes. To be able to use the leaves, they are slightly moistened beforehand to make them pliable for the preparation of sushi. To make sushi rolls, you need rice, raw fish and various vegetables. In addition, a flexible bamboo mat is used for rolling. First, the mat is placed on a work surface, a sheet of nori is placed on it and then a layer of rice about 1 cm thick is applied on top of it. Some of the raw fish and vegetables are then placed in it and then rolled up. This creates a roll that still needs to be cut. It is advisable to wrap the mat with some cling film, as the rice is very sticky and will get into the gaps.
