    The Japanese love their noodles: ramen, soba and of course udon. But what exactly are udon noodles? They are thick, wide, light-colored noodles. They are served hot and cold and taste incredibly delicious in a variety of dishes. Udon noodles do not have a strong flavor of their own and are quite soft. 

    What is the difference between udon, soba and ramen noodles?

    Udon noodles are significantly thicker and lighter than soba noodles. Unlike the slightly nutty-tasting soba noodles, udon noodles taste relatively neutral and are therefore perfect for strongly spiced dishes.

    Ramen noodles are made from wheat (just like udon), but are much longer and thinner than udon noodles. Ramen noodles are preferably eaten as a soup topping. 

    What dishes can you prepare with udon noodles?

    Udon noodles are eaten all over Japan. There are many different ways to prepare this delicious type of noodle. Of course, every region also has its own udon specialties. Here are four classic udon dishes that you can easily cook at home!

    Zaru Udon

    This is where the udon noodles are used cold. They are served on a bamboo mat. There is a dipping bowl with sauce. Each bite is dipped in the sauce before being eaten. Incidentally, the same dish is also available with soba noodles. 

    Kake Udon

    This is an absolute classic udon. The noodles are served in a hot broth. It usually doesn't come with any toppings, except for green onions.

    Kamaage Udon

    Here the udon noodles are served directly in hot water. There are various spices and a dipping sauce. Nori, hot chili peppers and green onions are usually served. 

    Tanuki Udon

    Especially delicious: Here the udon noodles are topped with crispy tempura dough. The dish can be served hot and cold. 

    Where in Japan can you get the best udon dishes?

    There are special udon restaurants all over Japan. Many of them offer very affordable and exceptionally delicious udon dishes for under 5 euros. There are also stand-up restaurants that specialize in the delicious noodles. Udon noodles are of course also on the menu in normal restaurants and are one of the most popular dishes in Japan. 

    What should you keep in mind when eating udon?

    Udon noodles, like almost everything in Japan, are eaten with chopsticks. If there are dipping sauces, then each bite is dipped individually. If the noodles are served in broth, they may - and should - be slurped. The broth is then drunk directly from the bowl. 

    Tips for preparation

    • Udon noodles taste best when you buy them fresh. In the dried state, they lose a lot of their aroma. 
    • If you are preparing udon yourself, you should make sure that they are not cooked for too long. Otherwise, they quickly become too soft.
