The preparation:

  1. Fill a pot with water and bring it to a boil.

  2. Meanwhile, you can slice the spring onions into small rings and the kamaboko (fish cake) into small slices.

  3. Cook the udon noodles as described on the package, this should be quite quick.

  4. If you don't want to make your own dashi (here is a recipe for it), you can use the instant version and prepare it now.

  5. Rinse the cooked udon noodles with cold water and put them in a soup bowl.

  6. Pour the prepared dashi over them.

  7. Now it's time for the toppings. Add 2 slices of aburaage (fried tofu) and some kamaboko.

  8. Garnish everything with the sliced spring onions and season it with shichimi togarashi. Enjoy!

Table of contents:

Ramen is not the only delicious Japanese noodle soup, Kitsune Udon is also a classic from Japanese cuisine. The combination of chewy noodles, dashi broth with the unmistakable umami taste, as well as various toppings like crispy tofu, fresh spring onions and soft fish cakes is simply perfect!

When do you eat Kitsune Udon?

This popular Japanese dish can really be eaten on any occasion! Especially on cold winter days, this soup warms you from the inside and helps with colds.

Can you also eat Kitsune Udon in summer?

Absolutely! You can also enjoy it cold in the summer with some dashi sauce.

How did Kitsune Udon come about?

“Kitsune” translates to fox and “Udon” are noodles. But what are fox noodles? It is said that the name comes from the fact that Aburaage is the favorite food of foxes in old Japanese fairy tales. Another theory says that the golden brown color of the tofu looks like a fox's fur.

Where can I buy Aburaage, fish cakes, Udon and Dashi?

These somewhat exotic ingredients can already be found ready-made in many Asian supermarkets. If you don't have one near you, you can also order the ingredients online, for example from Amazon. Dashi is available as instant powder, but have you ever tried making it yourself? It's not that hard! If you don't know exactly what dashi is, take a look at the following post:

    Broth Fish / Algae Broth

Udon noodles taste best when you buy them fresh. The frozen version is also very good. You should avoid Udon noodles from the refrigerated section, as these often do not have the right consistency and fall apart when cooking. If you want to learn more about Udon noodles, check out this post:

    Kitsune Udon for Vegetarians

Although it might not look like it at first glance, Kitsune Udon can very easily be converted into a vegetarian or even vegan version. You can make the dashi broth yourself and leave out the bonito flakes and also leave out the fish cakes.
