    Dorayaki - Delicious, Fluffy Double-Decker Pancakes

    The Japanese know what tastes good! Dorayaki is a sweet snack or dessert. Dorayaki are somewhat reminiscent of German pancakes. They consist of two layers of cake or pancake batter, between which there is a filling of Anko. Anko is a sweet paste made from mashed azuki beans and has a dark brown to dark purple color. The azuki beans themselves are already relatively sweet, but the paste is usually also sweetened with honey or sugar.

    What are Dorayakis made of?

    Dorayaki pancakes are made from Castella cake batter. This originally came from Portugal and is made from sugar, eggs, flour and glucose syrup. The Castella batter is light and fluffy and tastes really delicious when baked, even without filling or icing.

    While the classic Dorayaki variation is filled with Anko, there are now also variations with chestnuts, hazelnut cream and other fillings. The Matcha version is also very popular. Matcha Dorayakis have a delicious green tea flavor.

    You can get Dorayaki pancakes in Japanese supermarkets. Sometimes you can also get the treats freshly made from street vendors. With a little luck you can also find them in Germany in Asian stores.

    Make your own Dorayaki

    Ingredients

    • 2 Eggs
    • 100g Sugar
    • 1 1/2 tbsp Honey
    • 1 tbsp Mirin
    • 1/2 tsp Baking powder
    • 150g Flour
    • 40 - 60 ml Water

    Preparation

    • Beat the eggs, mix with sugar and stir until the sugar has dissolved. Add honey, stir well and also add Mirin and baking powder.
    • Slowly stir in the flour, first one half, then the other half, so that a smooth, viscous dough is formed. Stir in the water to make the dough a little more liquid.
    • Then you can already fry the pancakes in a lightly greased pan (1 pancake consists of about 2 tablespoons of dough).
    • Then you just have to fill the finished pancakes with Anko. Delicious!
