The preparation:

  1. First, open the oysters. Caution: This can be dangerous! Therefore, make sure to follow instructions!

  2. Wash the shucked oysters thoroughly with salt water

  3. Let the oysters dry - ideally on a layer of kitchen paper

  4. Season oysters with salt and pepper

  5. Fill the deep fryer with vegetable oil and heat to about 175°C (alternatively, heat oil in a pot/pan)

  6. Now prepare three bowls/deep plates with flour, beaten egg and panko

  7. First roll the oysters in flour, then dip them in the egg and finally coat them in the panko

  8. Now dip the oysters in the hot oil and deep-fry for 2-5 minutes. Turn them regularly so that they brown all over. It's best to pay attention to the color. When the oysters are golden yellow, they are done

  9. Now carefully remove the oysters from the oil.

  10. Lemon or orange slices and thinly sliced cabbage are good accompaniments. Arrange and serve!

Table of contents:

This Japanese classic consists of crispy breaded, fried oysters - and is one of the most popular oyster dishes in Japan. You'll find Kaki Fry in many Japanese restaurants. The delicious dish is also popular to cook at home. Especially significant: Because the Japanese value seasonal foods so much, Kaki Fry is primarily available when they are actually in season: in autumn and winter. If you want to cook Kaki Fry at home, you can of course also use frozen or canned oysters. What makes Kaki Fry so delicious? In short: The fact that they are as simple as they are crispy! The oyster dish is completely without elaborate spice mixtures and is simply seasoned with salt and pepper. The breading of flour, egg and the Japanese breadcrumbs - Panko - is then fried beautifully golden brown in hot oil. By the way: If you want to know more about Panko and the differences from German breadcrumbs, we have an article for you here:

Is there an alternative to deep frying? Yes, there is! If you either don't like greasy food, don't have a deep fryer at home or simply don't want to use so much oil, you can also bake the delicious Kaki Fry in the oven! To do this, you first need to toast the Panko crumbs in the pan until they are deliciously golden brown. Then bread the individual oysters in flour, egg and the Panko and bake them in the oven for just 15 minutes. How is Kaki Fry served? Traditionally, the fried oysters are served with lemon wedges and Tonkatsu or tartar sauce. Both sauces can be purchased ready-made.
