The preparation:

First, cook the round-grain rice according to package instructions.

Now thinly slice the onions and soak them in water to remove their bitterness.

Now it's time for the asparagus. Peel it, cut off the woody ends, and blanch it in boiling water for 2-5 minutes.

Now slice the lemons thinly.

The salmon is also thinly sliced.

Finally, it's time to assemble. First, put the rice in a bowl, then arrange the salmon, lemon, and asparagus on top, and finally garnish with the toppings (sesame and cress).

Japanese dishes usually consist of many different components - but there are also simple, delicious dishes served in a single bowl. These are called "Donburi" - which translates as "bowl". This is abbreviated to "Don". And the word "Sake" refers not only to the popular Japanese alcohol, but also to salmon. Don Sake is therefore a simple, but no less delicious salmon-rice combination with asparagus.
Tips
* Be sure to buy very fresh salmon of good quality. You can also replace the salmon with tuna or another fish that is suitable for raw consumption.
* Salmon is very healthy; it has many valuable omega-three fatty acids and is very high in protein. Try to buy wild salmon instead of farmed salmon - it has even more omega-three fatty acids!
* The Sake-Don is only as good as its ingredients. Therefore, be sure to serve the right rice and the right sauces - otherwise the taste will suffer!
