The preparation:

  1.  Combine all the ingredients in a small saucepan and whisk together.

  2. Bring the mixture to a boil over medium heat, stirring constantly, until the sugar is completely dissolved.

  3. Reduce the heat to low and simmer for 10-15 minutes.

  4. The sauce is ready when small bubbles form when you stir.

  5. Pour the sauce into a clean, preferably sterilized jar and let it cool without a lid.

  6. Shelf Life: The teriyaki sauce will thicken as it cools. You can use it immediately, or store any leftovers in the refrigerator for two to three weeks.

Table of contents:

Sweet and savory teriyaki sauce is a classic in Japanese cuisine, known worldwide and versatile. It goes great with meat and fish dishes, but also tastes very good with tofu. While the sauce is available in supermarkets in our country, it is mostly made at home in Japan. This is very easy and we'll tell you how!

    What does Teriyaki actually mean?

Teriyaki is a specific seasoning and cooking method and is composed of the words “Teri” - shiny, and “yaki” - grilled. So you can call any grilled or fried dish that shines “Teriyaki”.

Where can I buy ready-made teriyaki sauce?

In Germany, teriyaki sauce is now available in bottles in every major supermarket. You can definitely find it in Asian shops. If you are in Japan, you will have to look for Teriyaki Sauce in the supermarket for a long time, as it is rarely available, and then only as imported sauce. Because the Japanese know that it tastes best homemade :p

What does "cooked teriyaki style" mean?

Sometimes you read on menus e.g. “Chicken Wings - Teriyaki Style”. This simply means that they are seasoned with soy sauce, sake, mirin (rice vinegar) and sometimes sugar. The beautiful shine comes from the mirin used, which is why it should never be omitted. You can be creative with the other ingredients and try things out. The sauce also tastes delicious with honey, orange juice, garlic or ginger added.

What do I need to make teriyaki sauce?

The basic ingredients for Teriyaki sauce are soy sauce, sake, rice vinegar and sugar. In Western cuisine, ginger and garlic are often added. Just try out which version you like best.

What other differences are there between bottled teriyaki sauce and Japanese teriyaki sauce?

Japanese teriyaki sauce is much thinner than the Western bottled version. In Japan, the sauce is also not thickened with honey or cornstarch, as is common in the Western world.
