The preparation:

  1. Prepare the onigiri & cook the rice according to these instructions. Since this recipe only describes the filling. The basic onigiri recipe explains all the important things about onigiri.

  2. The umeboshi onigiri actually requires hardly any preparation. Simply remove the pit and either leave it as it is or cut it into small pieces, whichever you prefer. I personally prefer it when the ume plum is still whole, of course without the pit.

  3. In this step, you must now carefully press the plum into the small hole that you made before.

  4. Then just take some rice and close the onigiri. Afterwards, the onigiri should be kneaded a little bit to stabilize the shape.

  5. Finally, wrap the nori sheet around it as you like. Of course, I have created a Pinterest board for you where you can get inspiration. Just take a look over this box :).

  6. The onigiri is done! Yayyy I hope you enjoy it!

    Onigiri with Ume

Onigiri are triangular Japanese rice balls made with rice, water and a filling of fish, meat or vegetables. To prevent the hands from sticking to the rice, a sheet of nori is usually wrapped around the onigiri. Because onigiri are handy, delicious, durable and cheap, they are popular in Japan and also in Germany. Whether for breakfast, lunch, dinner or in between, onigiri are always suitable.

    Umeboshi

This recipe is a guide for the Ume Onigiri filling. This means that only the filling is explained here. But don't worry, here you'll find the Onigiri basic recipe . Briefly about the Ume plum. The Ume plum, as the name suggests, is not a plum, but a Japanese apricot. It is usually harvested green and pickled with a lot of salt. The fermentation process is similar to German sauerkraut. Just like sauerkraut, Ume(boshi - German. dried) is very sour, but is full of vitamins. Umeboshi is perfect as an onigiri filling because the apricot (or plum) has been fermented.

    Onigiri without Technique

If the onigiri with your hand doesn't work out the way you want it to, then you can also use a mold. This product may be able to help you :)
